October Recipe: Favorite Chicken Potpie

Ingredients:

  • 2 cups diced peeled potatoes

  • 1-3/4 cups sliced carrots

  • 1 cup butter, cubed

  • 2/3 cup chopped onion

  • 1 cup all-purpose flour

  • 1-3/4 teaspoons salt

  • 1 teaspoon dried thyme

  • 3/4 teaspoon pepper

  • 3 cups chicken broth

  • 1-1/2 cups whole milk

  • 4 cups cubed cooked chicken

  • 1 cup frozen peas

  • 1 cup frozen corn

  • 4 sheets refrigerated pie crust

Pinnacle Team Spotlight!

Torin received his Bachelor’s degree from Eastern Washington University in Exercise Science. He went onto earn a Physical Therapist Assistant degree in 2009 from Whatcom Community College in Bellingham, Washington. As an athlete in high school and athletic training student in college, Torin began to learn the importance of quality hands on care and the positive effects it has in the rehabilitation process. He loves the diversity of patients (from pediatrics to geriatrics) and daily challenges involved in outpatient orthopedics.

He has been treating patients in the orthopedic field for ten years, and has significant interest in the areas of chronic pain and therapeutic neuroscience education.
